Dalva’s Tapioca
Dalva used to work as a domestic helper, raising her two children and helping with expenses at her mother’s house. One day, she was laid off and decided to join her sisters-in-law who were selling tapioca on the streets. Her sisters-in-law lost interest, but Dalva continued with the business. It took her some time to perfect the tapioca recipe and she studied ways to keep it consistently soft. Then, one day, she noticed that her customers were becoming increasingly loyal to her tapioca. Since then, she never stopped. For the past 25 years, Dalva has been roaming the streets of the Historic Site of Olinda, including Coronel Joaquim Cavalcante, Henrique Dias, 13 de Maio, Rua do Amparo, and São Bento. She calls out to customers, saying, “Fresh and warm tapioca, would you like one?!” She offers traditional flavors such as coconut, cheese, and mixed (coconut with cheese). Surprisingly, her tapiocas are always warm and incredibly soft, a delight.
