Josa’s 'Only eat who can'

Manaus

Dona Josa’s snack is made with cassava dough, shredded pirarucu (a type of fish), and a lot of Murupi pepper, hence the name of the delicacy, which works as a challenge. She explains that some people make it with wheat flour and shrimp, replacing the cassava and pirarucu, but the pepper is always the same. Although “spicy,” the delicious snack is a hit at Josa’s stall, which she sets up on Saturdays in front of the São Benedito Quilombo Pagode. Customers are not put off by the “Só come quem pode” (“Only those who can handle it”) sign, and according to her, some even add hot sauce to the snack. In addition to the snack, Dona Josa serves tacacá, barbecue, vatapá, and pirarucu de casaca at her stall, much to the delight of the pagode-goers.
