Laurinha’s Sarapatel
Laura is a São Paulo native with a Portuguese look, married to a person from Pernambuco. While on vacation with her husband, she visited Olinda and decided to leave everything behind and move to the city. She put her house up for sale, and in less than a month, she had given up her career as a lawyer to live in a warmer land. As she explored her new home, she was amazed by the Pernambucan habit of consuming hot soups in such hot weather. She started going out in search of all the soups she could find. A frequent visitor to the Boa Vista Market, she learned that the spot in one of the stalls was “for sale,” and she didn’t hesitate to sell the house she had just bought to acquire the space. And just like that, out of the blue, she decided to sell soups herself! With her São Paulo demand, she runs the business with a keen eye. She developed all the dishes and personally cooks them with the help of two assistants. No one else is allowed to chop the cilantro but her because it has to be finely chopped. In addition to taking care of the cilantro, she cuts the pork meats herself to prepare the famous “caldinho de sarapatel” (sarapatel soup). The butcher only orders whole pork meats for her. And according to Laurinha, that’s the differentiating factor: knowing exactly what goes into your pot.
