During the nights of revelry in Vila Madalena, what becomes a sensation is the gratin mashed potato in Vany Dog’s hot dogs from the adapted Kombi of Dona Vany, a strong-willed woman from near Diamantina, who likes to chat and has many stories to tell. Over a decade ago, unemployment gave her the push and a glimpse of a great opportunity. Armed with experience in restaurants and hospitality, she hit the streets as a street vendor, selling natural sandwiches and gradually winning over her clientele. Things worked out, and in 2006, she settled in this strategic spot on Fradique Coutinho Street. In the small space of her Kombi – “There are three of us on the busiest days; it’s cramped, but we manage,” she says – she prepares a “Fradique Dog 2” – bread, sausage, mayonnaise, ketchup, mustard, meat sauce, garlic sauce, barbecue sauce, corn, peas, cheddar, catupiry cheese, prato cheese, champignon, potato straws, and the traditional mashed potato found in São Paulo hot dogs, made with selected potatoes, peeled at home, just like her grandmother used to do, as Dona Avani says. She is very concerned about cleanliness and the quality of everything. Nobody has direct contact with money. Dona Avani unwinds a peg to show how much she cares about the customers’ health. VaniDog is open from 4 PM to 2 AM during the week and from 5 PM to 5 AM on weekends; nobody returns home hungry from the revelry in Vila Madalena.
